Here is an awesome, filling, balanced diabetic friendly salad recipe my wife came up with that we eat for dinner about once a week. This is one of my all time favorite salads (and I eat a TON of salads!)
We call it “Awesome Chicken Salad”
Serves 2
Ingredients:
Spinach leaves (enough to fill big salad bowl)
Egg whites – 4
Avocados – 2
Black Olives – 1/2 of large can sliced (sprinkle to taste)
Garbanzo beans – 1/2 a can (cooked optional) can with juices…simmer until light brown in spots, add some pepper and Mrs. dash chili pepper…..
Mushrooms – 4 good sized
low fat feta / Gorgonzola – to taste
Croutons- Caesar flavored preferred (just a few)
Balsamic Breeze spray dressing (wishbone makes it….mmmmmm)
sugar snap peas – 1/2 cup or so
Chicken breast (6 small strips, or 2 breasts cut into strips) baked with olive oil and McCormick peppercorn medley and itallian herb mix, lemon pepper, garlic, and a smidge of dill. When chicken is cooked, let cool, chop into little cubes and place on top of salad.
Yum.
Carb watching: I have never had any spikes after this meal, but just watch the garbanzo beans, they have some carbs (about 50 in a cup canned, but you are only eating between 12 and 15 carbs worth) also about 16 grams of fiber per cup. The Olives have some carbs too, so go easy if you are on a super low carb diet.
